Kumaoni Raita

A Refreshing Side Dish

Kumaoni Raita is a traditional accompaniment hailing from the Kumaon region of Uttarakhand, India. This delightful dish adds a burst of flavor and a refreshing touch to any meal. This North Indian raita is made using cucumber, yogurt, mustard seeds, green chili, fenugreek seeds, turmeric, and coriander leaves. You can serve the raita during potlucks, buffets, game nights, kitty parties, or picnics. The raita tastes best when served chilled.

Ingredients:

  • Cucumber- 1 medium size
  • Mustard seeds powder (rai) – 1 tsp
  • Curd- 250 gm
  • Rock Salt to taste
  • Cumin seeds- ½ tsp
  • Turmeric powder- ¼ tsp
  • Green chillies- 1
  • Cloves of garlic (crushed)- 2 nos. (optional)
  • Black pepper and coriander leaves for garnishing

Preparation:

  • Wash, peel and grate the cucumber.
  • Squeeze the grated cucumber and keep the juice aside.
  • Mix the grated cucumber with curd evenly.
  • Add salt, turmeric powder and sliced pieces of chillies.
  • Mix crushed garlic cloves and other ingredients well.
  • Roast cumin seeds over medium flame on a flat pan and grind it.
  • Sprinkle the cumin powder over raita.
  • Sprinkle black pepper too and garnish it with coriander leaves
