Kumaoni Raita
A Refreshing Side Dish
Kumaoni Raita is a traditional accompaniment hailing from the Kumaon region of Uttarakhand, India. This delightful dish adds a burst of flavor and a refreshing touch to any meal. Ingredients:
- Cucumber- 1 medium size
- Mustard seeds powder (rai) – 1 tsp
- Curd- 250 gm
- Rock Salt to taste
- Cumin seeds- ½ tsp
- Turmeric powder- ¼ tsp
- Green chillies- 1
- Cloves of garlic (crushed)- 2 nos. (optional)
- Black pepper and coriander leaves for garnishing
Preparation:
- Wash, peel and grate the cucumber.
- Squeeze the grated cucumber and keep the juice aside.
- Mix the grated cucumber with curd evenly.
- Add salt, turmeric powder and sliced pieces of chillies.
- Mix crushed garlic cloves and other ingredients well.
- Roast cumin seeds over medium flame on a flat pan and grind it.
- Sprinkle the cumin powder over raita.
- Sprinkle black pepper too and garnish it with coriander leaves
