Uttarakhandi Roat
Roat is a traditional deep-fried bread from Uttarakhand, particularly popular in the Kumaon region. Ingredients:
- Wheat flour
- Cup milk
- Ghee
- Elaichi
- Saunf
- Jaggery
Preparation:
- Take 1 cup of water
- 1 bowl of jaggery then mix both in a pan with normal heat.
- Add ghee and saunf in wheat flour and mix it.
- Mix that jaggery water with the dough.
- Make a shape of round biscuit of that dough.
- Heat oil in a pan and fry roat in it.
- You can also add dry fruit on them or sprinkle it on them.
Roat can be known by different names like north-eastern sweet, pahadi cookie, Rotana, khajur, and flatbread. This sweet is very nostalgic for the people of Uttarakhand. Roat is also given as a gift to the newly married bride, which she carries to her Sasural as a memory of her parent’s house. Roat should be crispy so that it could taste like a biscuit. Roat is not an ordinary biscuit, it contains the emotions of the Uttarakhand people.
